The Advent activity today was to make Rocky Road. And not just any Rocky Road, Festive Rocky Road….
Here it is in all it’s glory:
It’s not just the sprinkles, we have added a few ‘festive’ extras too. It is based on the lovely Nigella’s Rocky Road Crunch Bars, from Nigella Express. Here is the recipe if you fancy making some:
This is what you need:
- 125g butter, cubed
- 300g chocolate broken into pieces (Nigella says minimum 70% cocoa, but we used 200g milk chocolate, and 100g bog standard dark chocolate, to make it a bit more child friendly for the Smalls. Hubby also professes not to like dark chocolate, although he has been seen to eat some on occasion…)
- 3x15ml tablepsoons golden syrup
- 200g biscuits (Nigella says to use Rich Tea, but we used Digestives, as I want to use the rest of the pack for a cheesecake base)
- 100g marshmallows-either buy mini ones, or cut big ones into 4 with scissors
- Grated zest of 1 satsuma/clementine (or 1/2 an orange if that’s all you have)
- Large handful of dried cranberries (or whatever dried fruit you happen to have-we picked cranberries as they are quite festive, and we had some in the cupboard!)
- copious amounts of sprinkles/edible glitter
This is what you do:
- In a largish saucepan, melt the butter, chocolate and golden syrup
- Put the biscuits in a (well-sealed) freezer bag and then get your assistant to bash them with a rolling pin-don’t let them get too carried away-you need some bigger bits and lots of crumbs
- Once the chocolate mix has melted, add the satsuma zest,
followed by the biscuit crumbs and the dried cranberries and stir well.
- Stir in the marshmallow pieces
- Tip into a foil tray or a lined brownie tin (Nigella say 24cm square, mine is about 20cm by 28cm ish) and flatten with the back of a spoon
- Allow Small person, or your own ‘inner artist’ to ‘tastefully decorate’
- Place in the fridge overnight or for a minimum of a couple of hours
- Cut into pieces and dig in!
This is double yummy, and a great one to do with the Smalls, as they love bashing the biscuits, breaking up the chocolate and scoffing all the marshmallows…
