Even lazier soup..?!

Following on from Lazy Soup, I thought I would share another quick and easy, and possibly even lazier soup recipe…

This is what you need:

  • an onion-chopped
  • 1-2tsp oil (any-olive/vegetable etc)
  • 2 tins chopped tomatoes
  • few basil leaves, or some thyme (optional)
  • cream/mascarpone/cream cheese (optional)

This is what you do:

  • Heat the oil in a medium-ish saucepan
  • Add the onion and cook over a low heat for 5-10minutes until softened
  • Add the tinned tomatoes-half fill each empty tin with water, swill around and then empty into the saucepan
  • Chuck in the herbs if using
  • Bring to a boil, then simmer for about 10 minutes, or as long as  it takes you to do whatever else you are doing..
  • Turn off the heat, blitz with a stick blender
  • Add a splash of cream/mascarpone./cream cheese/sour cream/ whatever you have in the fridge that needs using up
  • Season to taste
  • Enjoy!

(Apologies for the lack of a photo of the finished article-forgot to take one-oops! I’m sure you can imagine what a bowl of tomato soup looks like though….)
