Simnel Muffins

Here is a bit of a twist on the traditional Simnel cake for Easter, Simnel muffins..!

They have a delicious little nugget of marzipan hidden in the middle, and you can decorate the tops with mini eggs, which always makes them a hit for the Small people….

The recipe is from Good Food Magazine’s 101 Cakes and Bakes book.

This is what you need:

  • 250g dried mixed fruit (or just raisins if you have a ‘peel hater’ in the family…)
  • grated zest and juice of 1 medium orange
  • 175g butter at room temperature
  • 3 large free range eggs
  • 175g golden caster sugar
  • 300g self raising flour
  • 1 tsp mixed spice
  • 1/2 tsp freshly grated nutmeg
  • 5 tbsp milk
  • 175g marzipan
  • icing sugar, orange juice and mini eggs to decorate

This is what you do:

  • Tip the fruit into a microwavable bowl, add the orange zest and juice and microwave on medium for 2 minutes (alternatively, if you are organised enough, you can just leave it all to soak for an hour)
  • Line 12 deep muffin tins with paper cases
  • Pre-heat the oven to 18-C/gas mark 4/fan oven 160C
  • Beat together the butter, sugar, eggs, flour, spices and milk until light and fluffy-should take about 3-5mins
  • Stir in the fruit
  • Half fill the muffin cases with the mixture.
  • Divide the marzipan into 12 equal(ish!) pieces, roll into balls and then flatten with your thumb
  • Put one in each muffin case and then spoon the rest of the mix over the top
  • Bake for 25-30mins until risen, golden and firm to the touch
  • Remove and leave to cool completely before decorating
  • Beat together 200g icing sugar and 2 tbsp (ish) orange juice to make the icing (it should coat the back of a wooden spoon)-drizzle over the cooled muffins, and then pile high with mini eggs!

    I really enjoyed trying Paul Hollywood’s hot cross buns and putting the crosses on was less fussy than anticipated….. Delicious. Sara Cowan

      I make hot cross buns quite regularly but without the crosses, and then freeze them-they make a great snack for the Smalls!
