Millionaire’s Shortbread

When I posted about my Mum’s birthday recently, I happened to briefly mention that I made her a batch of Millionaire’s Shortbread in lieu of birthday cake (we were all caked out with making SmallSmall’s Gruffalo cake..!).

I feel it’s only fair to share the recipe with you now..! (And what better way to celebrate the end of Living Below The Line..?!)

This is Roxanne’s Millionaire’s Shortbread from Nigella’s How To Be  A Domestic Goddess

This is what you need:

  • 225g plain flour
  • 75g caster sugar
  • 375g butter
  • 4 tbsps golden syrup
  • 397g can condensed milk
  • 325g chocolate-the recipe specifies plain-I tend to use a mix of plain and milk

This is what you do:

  • Pre-heat the oven to 170C/gas mark 3
  • Put the flour, sugar and 175g of butter into a mixer and whiz for a minute until it all starts to come together
  • Press this crumbly mix into a lined brownie tin (mine is about 25cmx20cm) and smooth it over with the back of a spoon
  • Prick with a fork and then bake in the oven for 5 minutes, before lowering the temperature to 150C/gas mark 2 for a further 30-40 minutes. It should be a pale golden colour
  • Remove from the oven and allow to cool in the tin
  • Melt the remaining 200g butter in the microwave, and then add the condensed milk and the golden syrup. Give it a good whisk to incorporate the butter
  • Heat for 6-7 minutes in the microwave, stirring thoroughly every minute
  • It is ready when it has thickened a bit and turned a light golden-brown
  • Pour over the shortbread and leave to set
  • Break the chocolate into small even pieces, and melt it in the microwave-I do it for a minute, then check and stir and then 30s blasts, stirring each time
  • Spread this over the cooled caramel, and leave to cool
  • Cut into pieces and devour…

    Thats my favourite. I would quite happily give up all other forms of cake/biscuit and only eat millionaire shortbread

      They are kind of a cake/biscuit/sweet combo aren’t they? I am probably with you on that one..!
